M&M Oatmeal Cookies

    This was my third contribution to the Morgan Academy Cookies for Kids Cancer Fundraiser. 
    I also made these Rainbow Cookies and these Peanut Butter Rice Cereal Treats for the event.

    In my own life, I have been fortunate to only know one couple who has lost a child to cancer. The idea is so foreign to me. I am so thankful to see my daughter grow up to be a healthy and happy child and to have friends that are also healthy.
    The Cookies for Kids’ Cancer foundation is raising money to fund research for Pediatric Cancer cures.
    Did you know… “While long-term goals for the pediatric cancer community will focus on securing more federal funding for childhood cancer research (more than the 1-2% of the National Cancer Institute budget that is current expended), philanthropy plays a critical and essential role in the ongoing battle against childhood cancer.” *From CFKC

    That is amazing! 
    With the help of thousands of volunteers and millions of donations, we are helping to kick cancers butt! 
    Morgan Academy raised $450 at the bake sale. So far, we have raised an additional $380 on the giving page (as of 4 pm on 3/6/13). We are hoping to double our first donation.

    Now.. a little bit about these cookies… they were WONDERFUL!!
    I got the recipe from Sally’s Baking Addition and they were so good.
    The cinnamon and the oatmeal were a perfect compliment to the mini M&M’s.

    Mini M&M Oatmeal Cookies

    Prep Time: 20 minutes
    Cook Time: 10 minutes

    Ingredients (4 dozen)
    • 1/2 C (1 stick) Butter, softened to room temperature
    • 3/4 C Dark Brown Sugar
    • 1/2 C Sugar
    • 1 Egg
    • 2 tsp Vanilla
    • 1/2 tsp Baking Soda
    • 1/2 tsp Cinnamon
    • 1 2/3 C Old-fashioned Rolled Oats
    • 1 C Flour
    • 3/4 C mini M&Ms
    Instructions
    Cream the butter and sugars until smooth with a paddle attachment. Add the egg and vanilla and continue mixing. Slowly add in the dry ingredients. Mix together until just combined. Be careful not to overmix. Fold in the mini m&ms by hand.
    Refrigerate the dough for at least one hour.
    Preheat oven to 325 deg F.
    With a tablespoon cookie scoop, measure and roll dough. Place onto an ungreased baking sheet or silicon mat. Bake for 10-11 minutes and let cool on baking sheet for a minute or two before transferring to a wire rack.
    NOTES from Sally:
    ** Make sure to keep the unused dough chilled as you are working between batches. The dough MUST be cold. Cookies will be very flat if the dough is not very cold.
