    It’s getting hot and there are more and more weekend play dates happening these warmer days. I need some recipes that I can whip up without heating up. Enter mini no-bake huckleberry cheesecakes. You can make these up quickly for the kids and give them something sweet to eat.

    Mini No-Bake Huckleberry Cheesecakes are a perfect summer treat that satisfies a lot of hungry mouths. My kid and her friends ripped through these!

    Individual treats are great to please a crowd. It doesn’t matter if they are cupcakes, cake pops, or cookies, everyone likes to have their personal snack. No cutting, no fighting over the bigger piece, and there’s more than enough for leftovers for everyone.
    You can swap out the huckleberry jam for your favorite flavor. I know that huckleberry is tough to come by, but I love it! Order it and try it! You’ll love it, too!

    Mini No Bake Huckleberry Cheesecakes

    Ingredients 

    • 6 crushed graham crackers
    • 3 Tbsp butter melted
    • 1 8oz container Cream Cheese, softened
    • 3 Tbsp sugar
    • 1/4 container Cool Whip
    • Huckleberry Jam Or your favorite flavor

    Instructions 

    • Mix the crushed graham crackers and melted butter together and press a tablespoon into cupcake liners. Refrigerate while waiting for the cream cheese to soften.
    • Mix the cream cheese and sugar until smooth and creamy. Fold in the cool whip and add some jam if you want to flavor it. Spoon into the crusts top with a little extra jam. Cover with plastic wrap and refrigerate for an hour before serving.
