Gluten Free Strawberry Brownie Bars

Amazing Strawberry Brownies made with all gluten free ingredients.

Ingredients

Pretzel Layer

  • 4 C Gluten Free Pretzels
  • 1/2 C butter, melted

Brownie Layer

  • 1 box Gluten Free Brownie mix (9x9 pan size)
  • 2 eggs
  • 1 can Lucky Leaf Strawberry Pie Filling (remove 1/4 cup)
  • 1 C mini chocolate chips (GF)

Frosting Layer

  • 1/2 C butter
  • 1 C powdered sugar
  • 1/4 C reserved strawberry pie filling
  • 1 tsp vanilla exrtact

Chocolate Layer

  • 6 Tbsp butter
  • 1 C mini chocolate chips (GF)

Instructions

  1. Preheat the oven to 350 F and line a 9x9 pan with two layers of foil.

Pretzel Layer

  1. Pulverize the pretzels in a food processor to a fine crumble. Add the melted butter and mix together. Press it into the prepared pan. Bake for 8 minutes, remove and cool for 15 minutes.

Brownie Layer

  1. Mix the brownie mix, eggs, and Lucky Leaf Strawberry Pie filling (remove ΒΌ cup of the filling and save for the frosting). Stir in the chocolate chips and pour over the pretzel crust. Bake for 25-30 minutes and cool completely.

Frosting Layer

  1. Whip the butter, powdered sugar and reserved pie filling together until smooth and creamy. Frost the brownies and place into the fridge to chill for at least 20 minutes.

Chocolate Layer

  1. Melt the butter and chocolate in the microwave for 1 minute at 70% power and mix until completely melted. Pour over the cold frosting, smooth, and refrigerate to harden the chocolate.
  2. Cut into squares and serve with a sliced strawberry on top.
