Kiwiberry Pops

    Whew! I took a week off for Spring Break and now I feel like I’m totally playing catch-up! 
    I’m feeling behind on my emails and posts. I feel like I haven’t been sleeping well. The community is having a yard sale this morning, so I’ve spent way too much time culling through our crap to try and decide what to sell and what to toss.
    It’s exhausting!
    So, for this Happy and Healthy Saturday post, I hate to admit it, but I really haven’t been feeling it.

    I have eaten out more in the past two week than I have in 2014 so far. My eating has been full of fast food, rich food, fried food, junk food, and really, really good pasta! It’s time to get back on the wagon and get back into a whole food diet. Back to going to bed at a reasonable time and back two exercising. I’ve just got to do it!

    By Wednesday, I still had no idea what I was going to make for today’s post. However, on Thursday I discovered some Kiwiberries in my local grocery store.
    What the heck is a Kiwiberry and why do nine of them cost five dollars? I had to check these out. They reminded me of cute little cake pops, so I figured I could make a fruit pop with them! 
    So that’s exactly what I did!

    These little kiwiberries have edible skin, so there is no fuzzies and no peeling required. They are super sweet and full of flavor. Mine were very juicy as well. 
    At first I tried to completely dip the fruit, but they wouldn’t stay on the stick. I figured that the green was so pretty, why not just add a drizzle of chocolate and some fun sprinkles instead!

    And that’s exactly what I did!

    A few tips if you want to make this to take to school or serve at a summer picnic…
    #1 – They are fresh fruit. Wash and dry thoroughly! Water and chocolate do not like each other.
    #2 – Let them sit out for 30 minutes to come to room temperature. You don’t want condensation to form on the skin. Again, they should be dry.
    #3 – Remove the little bit of “hair” from the top of the kiwiberry. I just pinched it off. Cutting isn’t necessary and could lead to the fruit leaking.
    #4 – Poke a small hole in the bottom of the fruit (opposite the “hair”). This is where the lollipop stick will go. By preparing an opening, you will be less likely to push the stick through to the other end.
    #5 – Don’t let them sit too long after they are done. The paper lollipop stick started to swell and come apart after 3 hours. It just soaks up the juice and makes the stick mushy. Nobody wants that.

    Kiwiberry Pops

    Prep Time: 5 minutes
    Keywords: no-bake gluten-free low-carb nut-free soy-free fruit chocolate

    Ingredients
    • Kiwiberries
    • Chocolate Chips, I used Enjoy Life Brand
    • Sprinkles
    • Lollipop Sticks
    Instructions
    Wash and thoroughly dry the Kiwiberries. Let them sit out for at least 30 minutes to get the chill off.
    Melt your chocolate at 70% power in the microwave.
    Pinch off the “hair” and cut a small opening at the bottom of the kiwiberry.
    Dip a 1/4 inch of your lollipop stick into the chocolate and then insert at the bottom of the fruit until it half way into the fruit.
    Set aside and let the chocolate harden while you add sticks to the rest of the fruit.
    Drizzle the chocolate around the kiwiberry and add any sprinkles. Stand up to dry.
    Serve immediately.
