Unconventional Rainbow Jell-O

    My Little Cup Looooves Jell-o! She asks for it all the time. Problem is, I never have it made and ready when she wants some. For a special treat, I made her some Rainbow Jell-O, the Pint Sized way!

    I had a few obstacles to clear first… #1. I only had three packs of Jell-O in the cupboard. #2. I only had three packs of gelatin in the cupboard. #3. She wanted them NOW!

    I did not have enough of everything to make traditional layered Rainbow Jell-O, so I found a recipe that I could modify easily.
    Take 1 cup boiling water, add Jell-O, add 1/2 cup cold water. Stir, stir, stir until gelatin is dissolved and then place in the fridge overnight. No need for a special pan, I just left it in a 2 cup Pyrex measuring cup.
    With my 3 gelatin packs, I combined 10.5 ounces of condensed milk and 1.5 cups of water and heated just to a boil then added the gelatin and stirred it all up. I forgot to add the vanilla that it called for, but I thought they tasted sweet enough.
    My daughter and I enjoyed some lunch and some playtime while the milk cooled to the touch and then I got out my mini bunt pan! I filled each 1/3 full with the milk mixture then let my daughter add the chucks of    Jell-O. At first she was going to keep the colors separate, but then she saw how pretty it would be with all the colors in the mix.

    We had a lot left over, so I poured everything else into an 8×8 pan and stuck it in the fridge for an hour.

    The Little Cup ate up that Jell-O like it was going out of style! She Loved it! I am under strict instructions not to eat any while she is at school (Sorry, hunny. I can’t help myself).

    I love the Stained Glass look that this creates. One of these days I’m going to make this Crown Jewel Cake.
