  • 3 large eggs
  • 2 tablespoons sugar
  • 3 cups buttermilk
  • 1 teaspoon vanilla
  • 1/4 cup vegetable oil
  • 3 cups flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

  1. In a large bowl, whisk together the eggs and sugar. Then mix in the buttermilk, vanilla and oil. Stir in the flour, baking soda, baking powder and salt until just combined.
  2. Pour a few tablespoons oil in a small cup and keep near the stove along with a pastry brush to add oil into the pan between batches.
  3. Preheat your Cast-Aluminum Nonstick Aebleskiver Pan over medium /low heat for 4-5 minutes until hot. Brush each cup with a bit of oil.
  4. Add batter into each cup to fill about ⅔ of the way. Add one mini Reese's Peanut Butter Cup to the centers of the batter. Then cover with a little more batter. Let the aebelskivers cook for a minute until tiny bubbles begin to show on the surface and the edges look like they are setting a bit.
  5. Using a chop stick and small dual prong fork, slide the dough on its side. the uncooked batter will spill out into the center to cook. Once you have turned them all on their sides (they will look like clam shells), then continue to flip them all the way over. You need to keep them moving to prevent burning. Remove from the pan and keep warm until ready to serve.
  6. Top with powdered sugar, melted chocolate, whipped cream, etc.
  7. This recipe made a lot of aebleskiver! Mix up the fillings. There will be plenty for everyone!
