    Chocolate and Peanut Butter Aebleskivers

Have you ever tried to make Æbleskiver? They are delightful little puffy pancakes made in a specialty pan that turns them into little balls of deliciousness.

I got a Cast-Aluminum Nonstick Aebleskiver Panir?t=psbusa23 20&l=as2&o=1&a=B000ZUAFL4 a few months ago but never did anything with it. You’re really supposed to add fruit to the centers, but I decided to add some mini Reese’s Peanut Butter Cups to the centers.

    Oh my! How Wonderful!!

The chocolate and peanut butter melted and got all ooey-gooey in the center of these little pancake puffs. I loved them served warm, but I still ate them cold.

I have a feeling that you’ll be seeing these again. They were really good!

I was so impressed with myself for making them. It does take some practice, so watch a YouTube video of someone making them first. There is a bit of skill required. However, if you can flip a pancake, you can turn an Aebleskiver.

I was tempted to cover these with cocoa powder, but I thought that the powdered sugar was just prettier. You could also drizzle them with chocolate syrup or melted peanut butter.

If peanut butter isn’t your thing, try them with Rolos, Snickers, or 3 Musketeers. I bet any of them would be great!

If you love pancakes, these little pancake puffs are sure to please!

Everybody in the house LOVED them! However, I had to make some “empty” ones for my daughter. Crazy child didn’t want candy in hers!

    Total Time 30 minutes

    Ingredients

    • 3 large eggs
    • 2 tablespoons sugar
    • 3 cups buttermilk
    • 1 teaspoon vanilla
    • 1/4 cup vegetable oil
    • 3 cups flour
    • 1 1/2 teaspoons baking soda
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon salt
    • Mini Resees' Peanut Butter Cups

    Instructions

    1. In a large bowl, whisk together the eggs and sugar. Then mix in the buttermilk, vanilla, and oil. Stir in the flour, baking soda, baking powder, and salt until just combined.
    2. Pour a few tablespoons oil in a small cup and keep near the stove along with a pastry brush to add oil into the pan between batches.
    3. Preheat your Cast-Aluminum Nonstick Aebleskiver Pan over medium /low heat for 4-5 minutes until hot. Brush each cup with a bit of oil.
    4. Add batter into each cup to fill about 2/3 of the way. Add one mini Reese's Peanut Butter Cup to the centers of the batter. Then cover with a little more batter. Let the Aebelskivers cook for a minute until tiny bubbles begin to show on the surface and the edges look like they are setting a bit.
    5. Using a chopstick and small dual prong fork, slide the dough on its side. the uncooked batter will spill out into the center to cook. Once you have turned them all on their sides (they will look like clamshells), then continue to flip them all the way over. You need to keep them moving to prevent burning. Remove from the pan and keep warm until ready to serve. How to make aebleskiver

      1. Think about the first time you flipped a pancake and had it land on the one next to it… You learn as you go and by the end of it, they all come out perfectly!

    1. I absolutely love aebleskiver! My grandpa used to make the for me and my sisters every time we went to visit. They were amazing as they were, but I can only imagine they’re even better with chocolate and peanut butter inside. Also, not sure if this helps, but my grandpa used a knitting needle to turn the pancakes and that always seemed to work out really well.

      1. I want to try them with fruit next. I think the possibilities are endless! I tried a chop stick, but found that the little two pronged fork worked well. I need to work with the sticks some more.

      1. Thanks so much. I don’t know what you get with the pan or what recipe books are out there. This was a first for me, so I just went with it. Thanks for the invite over.

    2. All I can say is OMG! I have been making aebleskivers since learning from my mom. I love them! We usually put a small drop of jam in the center. My grandmother was born in Denmark and these are a family tradition. I am going to try your recipe next time. Thanks for sharing!

      1. You need to teach me! I had some deflate on me and I’m guessing that’s because I punctured them when trying to turn them. I’ll get the hang of it. I’m definately making them again!

    3. Just wanted to stop by and let you know that I featured you for this week’s Do Tell Tuesday party. It looks like you were featured on almost ALL the hostesses’ blogs! If you’d like to see the feature you can click here.
