    I’m always looking for something fast, easy and yummy for my family. When it’s Healthy, that’s even better! With all of the holiday Cookies starting to get passed around, I made some Apple chips instead. These yummy apples are baked with a light coating of sugar and cinnamon. You can omit the sugar or use a substitute, but I went with plain ‘ol granulated sugar.

    As I was researching Apple Chip recipes online, I saw some that involved making a simple sugar and coating the apple slices to soak overnight. Who has time for that? Not me – I’ve got some house cleaning to do! The best part is that these are cooked low and slow in the over, so you can pop them in and get some blogging um…housekeeping done.

    Here’s what I did:

    Preheat oven to 250 degrees Fahrenheit

    Wash and dry 2 small apples.

    Thinly slice the apple. Discard the ends and remove the stem. This is where having a mandolin would come in handy. (I’ve got one on the Christmas wishlist!)

    Slicing the apple from the top, like this picture, will result in chips like the ones posted below. To make the “star” center, like the picture posted above, turn the apple on its side so the stem is pointing to the left or right and slice.

     For fun, I cut out the seeds with a mini heart cookie cutter – you don’t have to, but the Little Cup insisted.

    The apples cut on their side will have the pretty star and will not need the seed center removed.

    Lay out slices on a cookie sheet lined with Parchment paper.

    Let the kids sprinkle sugar and cinnamon on the slices. Not too much, just enough… I used 3 heaping spoonfuls of sugar and grated fresh cinnamon sticks over the slices.

    Place in the oven for 1 1/2 to 2 hours, flipping every half hour.

    Let cool before eating. Once cool, store in a Ziplock bag and send a treat in the school lunch box!

    The thinner chips were crunchier, while the thicker ones were more like fruit leathers, but they were all good. The fruit leather’s were a bit chewier the next day. I would try to eat them up the same day. Maybe top a cupcake or add to some ice cream.
