Well, you can’t win them all.
This recipe was a stinker – or, at least, my attempt at the banana coconut bread was a stinker.
Yes, that’s right. I f…..f…..f….failed in the kitchen.
I’ve been reading more and more ebooks on using nut flours and it seems that Coconut Flour can be a bit temperamental. I don’t know enough about this adventure into baking with alternative flours so I really don’t know if the coconut was really the determining factor.
All I know was that this loaf was kinda gross.
It was soggy, oily, and had a very strange texture. I was not impressed with it.
But I wanted to share my “experiment” with you to let you know that I’m still learning. All of this is new to me and I am no expert in this department. I hope that if you have a failed recipe that you don’t give up and cave for something unhealthy.
It’s very difficult to maintain a strict eating habit. I’ve heard and read many reports about diets and why they fail and while cravings can be resisted, sometimes you need to listen to your body and feed it what it really, really wants.
This past Sunday I woke up and I could not choke down one more breakfast smoothie! Over two months of breakfast smoothies and I had had it! My belly wanted some crunchy cereal. So I had a bowl of cereal with 2% milk and I enjoyed it. I sat down and gave that bowl of cereal all my attention and loved every crunchy bite! I was satisfied. I was happy. There was no guilt and I ate paleo for the remainder of the day. (BTW – that day consisted of a fair with fried oreos, caramel corn, sugary drinks and funnel cakes!)
Temptations are all around us. It won’t be avoided. I knew heading off to the fair that there would be junk food. The only thing I really craved were the sugary drinks because it was so dang hot! But I packed some of my Paleo Chocolate Chip Cookies and a few Date and Cherry Balls and headed off with a bottle of water that I refilled a few times and I was good to go!
