Banana Foster’s Baked Oatmeal


    For the Baked Oatmeal

    • 1 1/2 C quick-cooking oats
    • 1/3 C packed brown sugar
    • 1 tsp baking powder
    • 1/2 tsp salt
    • 1 tsp cinnamon
    • 1/4 tsp nutmeg
    • 1 egg
    • 1/2 C milk
    • 1/4 C butter, melted
    • 1/2 C pecans, chopped
    • Additional milk

    For the Banana Fosters

    • 2 Tbsp butter
    • 3 Tbsp dark brown sugar
    • 1/2 tsp cinnamon
    • 1 – 1 1/2 under ripe bananas


    1. Preheat the oven to 350 and spray an 8×8 pan with non-stick spray.
    2. Combine the oats, brown sugar, baking powder, salt, cinnamon, and nutmeg. Mix in the egg, milk and melted butter.
    3. Pour into prepared pan and top with crumbled pecans.
    4. Bake for 25 minutes.
    5. When the oatmeal is done, prepare the banana foster.
    6. Place the butter, brown sugar,and cinnamon in a pan over medium heat. When the butter is melted and mix with the sugar, add the banana slices and cook for 1 minute. Flip the bananas over and coat the other side and cook for another minute.
    7. Spoon out the baked oatmeal and add some warm milk to your liking and top with the hot, caramelized bananas.
    8. Serve with coffee and enjoy.
    9. If there are leftovers, place the banana slices over the remaining oatmeal, cover and refrigerate. Microwave with milk for 45 seconds, stir and reheat for 30 seconds and enjoy another day.
