    How to make frozen Blueberry Coconut Push-up Pops.
    So, I’ve been seeing all of these “Back to School” photos of kids. My goodness, some kids go back to school early! I could not believe that my niece in Hawaii went back the beginning of August! I don’t understand why they are headed back so early!
    The public schools in West Virginia go back on the 18th. That is early this year compared to previous years. My daughter goes to a private school and they don’t go back until September 4th! She’ll be home alone with me for over two weeks while her friends are in school. What’s a mama to do?

    I guess I’ll just have to make more of these yummy Blueberry and Coconut Push-up Pops for us to enjoy.

    We can sit back in our blow-up pool, relax in the August summer heat, and enjoy some of these while laughing at the neighbors who were up and out the door at 8:15 am. We will stay up late watching movies and enjoying a late night snack.

    So, on the one hand, I’ll have to entertain her a bit more during the day, but I can still sleep in for two more weeks!

    Ahhhh…. bliss…. I am not a fan of alarm clocks and early mornings. I really enjoy sleeping in and as much as my kiddo doesn’t want to go back to school, I think that I despise it even more.

    It’s a good thing that I have these little yummies to cheer me up!

    Blueberry Coconut Push-up Pops

    Prep Time: 10 minutes

    Ingredients (serves 8)
    • 4-ounce cream cheese
    • 1/3 C Sugar
    • 1 1/2 teaspoons Milk
    • 1 C Cool Whip (thawed)
    • 10 ounce (1/2 a can) Blueberry Pie Filling
    • 1/2 C Coconut Flakes, small and large flakes (I used unsweetened)
    Instructions
    Cream the sugar, milk, and cream cheese until smooth.
    Fold in the Cool Whip and blueberry pie filling. The color should be uniform and no white should remain. Fold in the coconut.
    Transfer the mixture to a large plastic bag, cut off a 1 inch corner and fill the Push-up Popsir?t=psbusa23 20&l=as2&o=1&a=B00856QB2C. Cover and freeze overnight.
