I still can’t believe that summer is right around the corner. I mean it’s June already. When did that happen? School is out and pool is open and 4th of July celebrations are already in the works. My goodness, this year is flying by!
This post was originally for the Simply Create website. I was a contributor for several months and I really enjoyed working with them. Unfortunately, they have decided to drop the blog from their site, therefore, I am out of a job. These Patriotic Lollipops were my last submission and they didn’t post it. 🙁
But that’s okay, because I have them here for you now! I had a lot of fun with the lollipops. The kids loved them and I didn’t burn myself (unlike with my hot glue gun). Making the candy is NOT something that the kids should help with. It is mega hot napalm that can cause serious burns.
The kids can help add the sprinkles, being careful not to touch, or decorate after the candy has dried.

You can use a hard, candy mold (not a chocolate mold), drop the candy free handed, or make fun, abstract pops like the ones above.
Like I said, the kids loved all of them and quite honestly, the bigger the better to a 8 year-old’s point of view.
These will get tacky if left out on a humid afternoon. If you want to take these to the family reunion or hand out after a pool party, it’s best to keep them cool and dry for as long as possible.

Instructions
For the Stove Top Method
Combine the sugar, corn syrup and water in a 2 quart pot. Stir over medium heat until the sugar dissolves. Bring to a boil and stop stirring. Using your candy thermometer, add a few drops of color when it reached 260℉. Remove from heat at 300℉ and add stir in the flavoring when it stops boiling.
Working quickly, pour your lollipop shapes on to the prepared cookie sheet or lollipop molds. Roll a lollipop stick in the candy to coat it. Leave them plain or add some sprinkles while it is still liquid. This is where it helps to have second person add sprinkles while you pour the candy.
You can also make some free-form lollipops by drizzling the candy from a spatula over the lollipop stick and added some decorations.
Leave to harden and cool, about 10 to 15 minutes depending on how thick the poured candy is.
For the Microwave Method
Mix the sugar and corn syrup in a glass measuring up. Cover with plastic wrap and microwave for 2 minutes.
Remove from microwave and carefully remove the plastic wrap. Stir and cover with a new piece of plastic wrap. Microwave for 90 seconds watching that it does not burn and turn dark brown. Remove from the microwave, add in a few drops of flavor and food coloring and stir.

To Decorate
Make some star shaped candy.
*NOTE – I was able to make a try of molded lollipop and a tray of stars from one batch of microwave candy.
To attach the star to the plain lollipop, add a bit of the Glitter Gel to the candy and rub it around. Add the star to the pop and then add sprinkles to decorate.
I learned the hard way not to add the sprinkles then the star candy. The star candy did not stick well to the sprinkles.
Allow the decorated pops to dry before wrapping them up.
