I am so thrilled to have this opportunity to work with The Home Depot and receive product to enhance our organic garden. All thoughts and opinions are my own.
How do you define an Organic Garden? I’ve researched online and asked neighbors and friends and everyone seems to have slightly different thoughts on what Organic Gardening is.
To me, the photo above speaks volumes about my yard and garden. If my garden is healthy and safe to grow new plants and healthy animals, then I think I’m doing a pretty good job.
We have baby robins in a nest. There are plants that have self sewed for another season. And there are some naughty bunnies that dug a burrow under my tarragon.
I also am very proud of my earthworms! They are necessary for good soil and their castings are great for organic composting. (I thought about adding a photo of some, but didn’t think most people would want to see that on a food blog.)
I see a very healthy garden that is able to nurture and provide life.
Below is a photo of a Praying Mantis egg sack in my Lavender bush. I get about 2 to 3 egg sacks each year in the garden. One year, I came out and found my back porch covered in teeny tiny Praying Mantis babies. It was weird, but really fascinating at the same time.
Do you know much about beneficial predatory bugs? They are the “good” bugs that eat the bugs that eat your plants. Last year we released Ladybugs to eat the aphids that eat the rose buds. This year, I’m thinking of getting some Nematodes
to get the grubs in the ground before they turn into Japanese Beetles. They are the worst critter in my garden in the summer!

So far this Spring, I haven’t had to water too much. But in the summer… it’s another story. Our water bill can get crazy because of the extra watering that I need to do in the yard. That’s why we have 6 water barrels to collect rainwater.

We have 3 green barrels at the back of the house. Along with this large one and two of these smaller rain barrels at the front of the house.

While the watering can is fine now, it’s not fine when I really, really need to water. That’s why we have a water pump
. I use the pump to get all 50 gallons of water out. Sometime I hook it up to the sprinkler and go through an entire 50 gallons in 15 minutes!

I planted some Burpee’s Organic Watermelon, Cucumber, and Cantaloupe seeds on April 26th. My cucumber are doing great and coming up, but my cantaloupe are not doing too well. I think someone has been nibbling at them…
And, my new Strawberry plants have already provided me with my first strawberry of the season. I’m waiting on my established strawberries to ripen, but they are full of flowers and green berries. I can’t wait!
Today, I’ve whipped up something cool and refreshing with Thyme.
Thyme is also in the Mint family
and likes to roam. Don’t be afraid to chop off a huge bunch and give it a drastic haircut if it travels too far. I don’t think it’s quite as invasive as mint, but it will get large if left alone.
Thyme can be used for more than just main courses.
It’s also used as a holistic agent for a lot of ailments.
Pineapple with Thyme-Ginger Ice

Prep Time: 24 hours
Cook Time: 30 minutes

Ingredients (8 desserts)
- 1 tsp fresh, organic Thyme leaves
- 2 (12 oz) cans Ginger Beer or Ginger Soda
- 1 whole Pineapple
- Vegetable Oil
- Kosher Salt
Remove the Thyme leaves from the springs and sprinkle into an ice cube tray. Fill up the ice cube tray with the Ginger Beer and freeze overnight.
Preheat oven to 400 deg F.
Remove the exterior of the pineapple, including the eyes, and slice into 8 equal parts. Lay the pineapple slices on a cookie sheet lined with a silicon mat. Brush both sides of the pineapple with the oil and sprinkle with sugar. Add salt if desired. Bake for 20 minutes then flip over and continue baking for 10 more minutes. You should see some browning of the tips.
Remove from the oven and allow to cool on the cookie sheet.
Remove Ice Cubes and place into a food processor. Pulse until the ice is light and fluffy. If you are not serving right away, place into a shallow bowl or cake pan and return to the freezer. Scrape with a fork to loosen prior to serving.
To serve, place a warm slice pineapple on a plate and top with a tablespoon of the Thyme Ginger Ice.
Enjoy on a warm evening.
