    • All-Purpose Flour – Start with the flour as the base for your cookie dough.
    • Baking Powder – Using baking powder is ideal because it gives your cookies that perfect lift while they bake.
    • Butter – Use two sticks of unsalted butter in this recipe.
    • Vanilla Extract – Enhance the taste of your cookies with a bit of vanilla extract in the mix.
    • Chopped Dried Cranberries – Add a slightly sweet taste using these dried cranberries.
    • Grated Orange Peel – Grate the peel of an orange for a citrus-like taste.

You’ll also need a large egg, granulated sugar, and chopped walnuts. However, walnuts are optional. If you’d like to make a glaze for the cookies, you’ll need milk or heavy cream and some powdered sugar.

    How to Make Icebox Cookies

Grab a large bowl and add your flour, baking powder, and salt to it, whisking these ingredients together before grabbing a separate large bowl and beating your butter and sugar together until fluffy.

Beat your egg and vanilla extract until combined and then begin slowly adding your flour mixture until it’s all added and combined. Next, fold in your dried cranberries and the orange peel zest for that citrus touch.

Divide your dough in half, rolling it into a log.

Chop some walnuts and spread them evenly on your parchment paper before adding the dough log on top and coating the edges of it.

Cover your dough log with plastic wrap and place it in the fridge for up to two hours.

Cut when it’s firm, preheat the oven to 350 degrees F, and then bake the cookies for 10-12 minutes before cooling them down on a wire rack.

Mix the glaze ingredients and drizzle over cookies after they cool if you’re planning to use the glaze.
