    There are two very special little girls that celebrated a mermaid pool party last week. Their mom asked me to make an intricate fondant mermaid and there was no way that I could do that. No. Way!

    Kneading Fondant may be a tough job, but it's worth the work. from #DietersDownfall.comI talked her out of an elaborately decorated cake that I could in no way deliver in favor of a more simple design.

    Then I came across this tutorial on Instructables and thought it would be perfect for the cake.

    We decided on lime green and berry blue for the colors and I went with it.

    Jello Fondant

    This easy marshmallow fondant is flavored and colored with jello.

    Prep Time 30 minutes
    Total Time 30 minutes

    Ingredients

    • 1 (10 oz) bag of mini marshmallows
    • 1 (3 oz) box of jello
    • 2 tablespoons water
    • 1 pound powdered sugar
    • shortening

    Instructions

      1. Place the marshmallows, jello, and water into a glass bowl. Microwave for 30 seconds at 50% power and stir. Microwave again and stir completely.
      2. Gradually add in 1/4 of the powdered sugar and give it a good stir. It will be thick and sticky, but keep stirring. Add in a bit more sugar and when it gets too thick to stir, then transfer it to a silicon mat that’s coated in shortening.
      3. Knead more sugar in until it no longer sticks to your hands. You may not use all of the sugar or you may need to add a bit more sugar; it all depends on how thick you want your fondant.
      4. Once it’s at a thickness and consistency of play-doh, it’s done.
      5. To store your fondant, add some shortening to your hands and rub it over the fondant, wrap it with plastic wrap and then place it into a sealed bag, preferably one with a vacuum seal. Let your fondant sit overnight.

    1. After I cover the cake in fondant, will I be able to make little decor pieces to stick to the fondant covering the cake…maybe just add a tiny bit of water to make it stick?

      1. If you google “Fondant Glue” there are a few different ways that you can adhere decorations to the fondant. I hope that helps.

      1. I generally have kept the fondant whole for a day and then used the pieces when they were cut. Then I’ve left them on the cake for another day or two. The marshmallow fondant doesn’t get hard, but it will dry out and get brittle.

          1. Yes you can make it a few days in advance. I put a thin layer of shortening over the fondant and then wrap it up tightly with plastic wrap. Keep the air off of it as much as possible to prevent it from drying out. When you are ready to use it, massage it to warm it up and make it pliable again.

    2. So I have read a couple of these recipes and they all list a little water as an ingredient. None of them mention using it in the instructions. Where is the water used?

    3. What about using the marshmallow creme? It’s already in a melted like stage. Same goes with strawberry flavor marshmallow creme!

    4. I’m making my son’s wedding cake andhe wants a key lime cake, but doesn’t like store bought fondant. So glad I came across this recipe!

      1. This is such a good fondant recipe. Yes, store-bought fondant is bland and gross, but this jello fondant stays soft and tastes wonderful. If the lime flavor is too much, you can simply use half the box and replace the water with key lime juice. Good luck with the wedding planning!
