Lemons to Lemonade Cake Pops

    Here we are – another Friday and more Pops!
    This time, I made Lofthouse Sugar Cookie Pops. 
    Like, the Little Debbie Strawberry Shortcake Pops, these don’t require you to bake ahead of time. 
    Of course, you can always make a batch of fresh cookies yourself!
     You can use any flavor of cookie and frosting to create your own flavors.
    My grocery store carries seasonal flavors that are fun to play with. I’ve made these before with Strawberry Cookies and lemon extract and frosting for a fun combination.

    To make these you will need:
    10 Loft House Sugar Cookies (-1 to taste test)
    2 tsp Extract
    1 Tbls Frosting
    12 Lollipop sticks 
    6 bendy straws
    6 White Chips
    Yellow and White Candy Melts

    Taste test one of the cookies to ensure freshness and maximum yumminess!
    Break up the cookies and sacrifice them to the food processor.

    It’ll take a few pulses to break up the cookies into a fine crumble.
    To that, add the frosting and the extract.
    I used 2 teaspoons of Raspberry extract, but I could not taste it in the finished product.
    I used vanilla frosting. I wish I had strawberry frosting and skipped the raspberry extract. 
    Oh well, they were still good!

    It should take a few more pulses on the get the frosting mixed in. It’ll look like it’s still crumbly, but if you press it between your fingers and it holds, it’s ready to form.
    I used my larger scoop and made 12 pops.

    I made 6 glasses of lemonade by shaping a oblong rectangle shape; 3 oval shapes for lemons; 3 rounded triangular shapes as the lemon wedges. I popped them into the fridge while I melted my candy.
    Remember, low power setting in the microwave. Use 70% power for 30 second intervals and stir, stir, stir.
    ***Also, with the temperature and humidity going up, turn your AC on or work with a fan on. The humidity will cause your candy to thicken on you.

    I attached the sticks to the shapes with the melted candy.
    Then, I dipped the glasses and set them aside to dry. 
    After a few minutes, I dipped the tops into white candy and inserted the  straw piece.

    To make the lemon ends, I attached white chips with candy and allowed it to dry.
    Then dip the pop.

    Here’s my lemon wedge prior to dipping.  I loved the inside color of the pop!

    Once the candy was dry, I used a toothpick to add a white rind and used a fork prong to make the groves in the lemon wedge. 
    Easy… Peasy!
    These would be great to make for your summer lemonade stand or summer party.

    2. What a great idea to use the lofthouse cookies…although my hubby would be very unhappy if I did that to his favorite cookies! I love the glass of lemonade with the straw…so cute!!!
