Pineapple Cobbler


  • 1 C Flour
  • Pinch of Salt
  • 1 C Sugar
  • 1 Tbls. Baking Powder
  • 1 Stick Butter, Melted
  • 3/4 C Milk
  • 1 20 oz. can of Pineapple Chunks, drained


  1. Preheat oven to 375 deg F.
  2. Combine dry ingredients and add in milk. Stir to combine. Add in the melted butter and fold until combined.
  3. Add to a 9 x 13 pan and cover with pineapple chunks.
  4. If making in jars, add 3 heaping tablespoons of the batter to each half pint and add 5 pineapple chunks. I just had 4 jars, so I added the remainder of the mix to an 8×8 dish and baked everything for 25 minutes.
  5. You’ll see the pineapples drop to the bottom of the dish and the cobbler will puff up and turn golden brown.
  6. Allow to cool slightly and serve with warm with ice cream or whipped cream.
