    Pineapple Strawberry Coconut Popsicles

    It’s slowly warming up and it’s time for popsicles to go into the freezer! I’ve made some delicious (and healthy) pineapple strawberry coconut popsicles that you and your kids are going to love! There are just the three ingredients and have minimal sugar. It’s perfect for an after school snack or mid-day weekend treat!

    Do your kids help you in the garden? My daughter kinda, sorta, not-really does. She helps for a few minutes, then get’s bored and ditches me to play with her friends. She likes the idea of gardening – she likes picking the flowers and the fresh fruit – she loves watering (with a sprinkler).

    I guess she’s just good at staying out of the way.

    I’ve already started in the garden this year. The winter leaves have been cleaned up and all the dead stuff has been removed. I’ve got fresh mulch down and threw out my back in the process.

    Anyway, even though it’s just spring, these popsicles hit the spot after a hard day working in the garden. The sweet pineapple and strawberries were great mixed with the coconut cream.

    I chose not to add any additional sweetener. If you don’t think that the pineapple juice is sweet enough, feel free to add your sweetener of choice. Or you can let the strawberries mix with sugar for an hour before using them.

    Pineapple Strawberry Coconut Popsicles

    Kids young and old can make and enjoy these Pineapple Strawberry Coconut Popsicles. Real, simple ingredients make these popsicles dairy free and naturally gluten free.

    Additional Time 6 hours
    Total Time 6 hours 5 minutes

    Ingredients

    • 1 8oz can crushed pineapple with natural juice
    • 1 cup strawberries, cut into small pieces
    • Coconut cream from a can of Coconut Milk

    Instructions

    1. The easiest way to get the coconut milk cream is to place the can in the fridge overnight. Let the cream separate from the water, open the can and remove the water reserving the cream.
    2. Strain the pineapple juice off and mix the juice into the coconut cream.
    3. Layer the crushed pineapple and strawberry pieces into popsicle molds and then top off with the sweetened coconut cream.
    4. Freeze for 6 hours and enjoy!
