Triple Layer Cherry Brownies

    For an update to your everyday brownies, I have a super simple recipe that is sure to be a crowd-pleaser! All three layers of deliciousness are sure to satisfy your sweet tooth and bring you back for more. My Triple Layer Cherry Brownies are perfect for your next special occasion or normal Friday night.

    These triple layer cherry chocolate brownies are loaded with so many great flavors. They're the perfectly indulgent sweet treat!

    Triple Layer Cherry Brownies

    For the record, this is not a quick brownie mix recipe, although, in a pinch, I suppose you could use a boxed brownie mix, I highly recommend starting from scratch. This entire recipe is from scratch, which is both impressive and, I promise, surprisingly simple.

    I have been making brownies for years. I decided it was time to make my own recipe. This brownie mix truly works well with the other two layers. Speaking of the other two layers, the middle layer is a lovely cherry frosting addition and the top layer is a delicious chocolate shell. It will all harden into a beautifully layered brownie that is sure to impress!

    Perfect Summer Treat

    This is a perfect summer treat since cherries are in season. Fresh fruit always makes a bold statement in desserts. Plus, combining chocolate with fresh cherries is always a great idea!

    Keep in mind, each layer needs to cool and harden, so these layered brownies need to be made ahead of time. Tossing the cooling brownies into the fridge will speed up the process, but each step has a waiting period before you can move on to the next layer.

    The brownies need to cool completely (at least an hour) before adding the frosting. The cherry frosting layer needs to be nice and cold before adding the chocolate shell so that the butter does not melt. Then the chocolate shell needs to be hardened before serving. It’s a slightly tricky balance, but as long as you give yourself enough time, it will turn out perfectly.

    One of the best parts of my recipe is that it uses a foil sling in the pan, so when all the layers are hardened, you can simply lift the whole thing out of the pan and voila; one less dish to wash. Not to mention, since each layer has to cool before adding the next one, it gives you time to clean up the dishes from the previous layer and keep your kitchen together as you go!

    Serving also becomes even easier with the brownies out of the pan. The triple brownie layers should all be hard enough to stand on their own and make a beautiful brown and pink dessert that is sure to look impressive and taste even better.

    What You Need to Make Layered Brownies

    All the Butter: Each of the three layers uses butter. Butter makes everything amazing, don’t you think?

    Sugar: Both granulated sugar and powdered sugar are needed, for different layers. The granulated sugar is used in the brownies while the powdered sugar is used to create the frosting layer. Making frosting from scratch is extremely simple, especially when you can control the thickness of it with powdered sugar.

    Eggs, Vanilla, Flour, Chocolate Syrup, and Milk Chocolate: These are the remaining ingredients that round out the brownies and give them their yummy chocolate flavor.

    Cherry Juice and Chopped Cherries: These two ingredients make the frosting layer a delectable cherry flavor. Cherry and chocolate brownies are such an amazing fruit and sweet combination, don’t you think?

    Chocolate Chips (I use semi-sweet): Melted with the butter, this will be your chocolate shell layer. Once it cools, it hardens perfectly to be firm, but not completely solid.

    Tips and Tricks for Making Cherry Chocolate Brownies

    For a more cakey brownie layer, use the full amount of flour. For more fudgy and moist brownies, use less flour. You may have to play with the recipe a few times to achieve your desired texture, so have fun eating a lot of cherry brownies.

    The layered brownies are topped with a chocolate ganache that makes them extra indulgent.

    One thing to note is that this recipe only makes a 9×9 pan of layered brownies. So, if you need it to stretch, rely on the fact that this dessert is three layers tall and decadent enough to cut it into smaller pieces and still satisfy a sweet craving without going overboard. Either that or plan to double the whole thing from the get-go.

    Ingredients

    First Layer – Brownies

    • 1/2 C Butter
    • 1 C Sugar
    • 4 Eggs
    • 1 teaspoons Vanilla
    • 1 C Chocolate Syrup
    • 4 oz Milk Chocolate – melted and cooled
    • 1 C Flour

    Second Layer- Frosting

    • 1/2 C Butter
    • 2 C Powered Sugar
    • 2 Tablespoons Cherry Juice
    • 10 Cherries – chopped up

    Third Layer – Chocolate Shell

    • 6 Tablespoons butter
    • 1 C Chocolate Chips

    Instructions

    First Layer – Brownies

      1. Mix the butter, sugar and eggs. Add the vanilla to combine. Mix the syrup and melted chocolate and fold in the flour.
      2. Line a 9×9 baking dish with 2 pieces of foil to form a sling. Bake at 350 for 30 minutes.
      3. Cool brownies for at least an hour. I popped them in the fridge to speed up the process.

    Second Layer- Frosting

    1. Cream the butter and 1 cup powdered sugar. Add cherry juice and remainder of sugar.
    2. Mix in the chopped cherries just until combined.  Layer over the brownies. Let harden in fridge.

    Third Layer – Chocolate Shell

      1. Melt together in microwave for 45 seconds and stir to a beautiful, glossy finish. Pour over the frosting, smooth with an offset spatula and let harden in the fridge.

    6. Look amazing! My BF adores Chocolate and Cherry… anything! Do these need to stay refrigerated after everything is completely cooled and cut? Pretty sure he would eat them all, but just in case! And I'm guessing these could be made with brownie mix from a box? That's all I've got on hand ):
