Ingredients
- 2 ⅓ cups all-purpose flour
- 1 small box 3.4 oz instant vanilla pudding mix dry
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsalted butter 2 sticks, softened
- ¾ cup brown sugar packed
- ¼ cup granulated sugar
- 2 large eggs room temperature
- 1 teaspoon vanilla extract
- 2 cups semi-sweet or milk chocolate chips
Step by Step
- Preheat oven to 350 degrees F.
- Line baking sheets with a silicone mat or parchment paper.
- In a medium bowl, whisk together flour, pudding mix, baking soda, and salt.
- In a large mixing bowl, beat together butter, brown sugar, and granulated sugar until creamy and fluffy.
- Beat in eggs one at a time, scraping down the sides of the bowl each time.
- Beat in vanilla extract.
- Gradually add the flour mixture and mix just until combined, don’t overbeat.
- Stir in chocolate chips.
- Divide batter using a cookie dough scoop or tablespoon onto prepared baking sheets.
- Bake for 8-10 minutes or until edges are set and lightly golden brown. These cookies are best a little under-baked.
- Allow to cool on pan for 2 minutes, then remove to a wire rack.
- Serve or store in an airtight container.
