Step by Step
- Add the almonds to a food processor and chop.
- Add in 6 dates and pulse.
- Add vanilla, cocoa powder, and cherries and pulse until combined. Check the “stickiness” of the batter by pinching it to see if it holds the shape. Add more dates as needed to get the batter to hold together.
- Add in the chocolate chips, if desired.
- Measure out 1 tablespoon of batter and squeeze in your hand to shape. It’ll take some pressing, but it should stick together. If it’s still not sticky enough, add another date.
- I added a cherry to the center of the snacks for a little extra flavor.
