Easy Spice Apple Cake that starts with a spice cake mix or from scratch, and is topped with a cream cheese frosting. This amazing cake is all dressed up with applesauce, cinnamon, maple syrup and some cream cheese frosting on top!
Preheat the oven to 350 °F and prepare a 12 cup bundt pan. Remove all ingredients from the fridge at least 30 minutes prior to baking.
Beat the eggs with the water in a bowl until foamy, then add the cake mix and instant pudding, all mixing only loosely. Now add applesauce and mix until combined. Do not overmix .
Batter from Scratch:
Put eggs with sugar in a bowl and beat with a hand mixer until foamy. Then add the sifted flour, vanilla pudding mix, baking powder, salt and spices. Mix until combined but do not overmix! Add applesauce and oil and mix.
Add in the shredded apples and stir to combine.
Pour the batter into the prepared bundt pan and bake for 60- 65 minutes. Test with a toothpick for doneness. Let the cake cool in the pan for 10 minutes then turn it over on to a wire rack and cool completely.
Mix the room temperature cream cheese, butter, sugar, maple syrup, and cinnamon with a whisk for 5 minutes until combined. Add milk as needed to thin the icing to a smooth yet runny consistency.
Drizzle frosting over the bundt cake and add more maple syrup of you'd like. Slice and serve.
