Ingredients
Spice Bundt Cake batter from scratch:
- 4 cups all purpose flour
- 1½ cups brown sugar
- 3 teaspoon baking powder
- ½ teaspoon salt
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- ½ teaspoon ground allspice
- ½ teaspoon ground cloves
Bundt Cake batter with cake mix:
- 1 Spice Cake Box Mix
Other ingredients for the batter:
- 4 eggs
- 1 cup vegetable oil water for the cake mix
- ⅓ cup applesauce
- 3 ½ oz instant vanilla pudding mix
- 2 apples shredded
For the Frosting
- 4 oz cream cheese
- 4 oz butter
- 1 cup powdered sugar
- ½ teaspoon maple syrup
- ¼ teaspoon cinnamon
- ¼ cup milk
- Maple syrup for topping
Step by Step
Start Preparation- Preheat the oven to 350 °F and prepare a 12 cup bundt pan. Remove all ingredients from the fridge at least 30 minutes prior to baking.
- Beat the eggs with the water in a bowl until foamy, then add the cake mix and instant pudding, all mixing only loosely. Now add applesauce and mix until combined. Do not overmix .
Batter from Scratch:
- Put eggs with sugar in a bowl and beat with a hand mixer until foamy. Then add the sifted flour, vanilla pudding mix, baking powder, salt and spices. Mix until combined but do not overmix! Add applesauce and oil and mix.
- Add in the shredded apples and stir to combine.
- Pour the batter into the prepared bundt pan and bake for 60- 65 minutes. Test with a toothpick for doneness. Let the cake cool in the pan for 10 minutes then turn it over on to a wire rack and cool completely.
- Mix the room temperature cream cheese, butter, sugar, maple syrup, and cinnamon with a whisk for 5 minutes until combined. Add milk as needed to thin the icing to a smooth yet runny consistency.
- Drizzle frosting over the bundt cake and add more maple syrup of you'd like. Slice and serve.
