So, the other day I had my recipe and was getting ready to bake something special. It never got made, because I messed up the ingredient amounts and needed to find a new recipe that accommodated what I already had in the mixer…. so I made these Yummy Mocha Chocolate Chip Cookies!
Thanks goodness for mistakes, or I would have never gotten to enjoy these wonderful cookies!
I got this recipe from my Better Homes and Gardens Cookie Classics Cookbook
Mocha Truffle Cookies
1/2 C butter
1/2 C semisweet chocolate chips
1 Tbl instant coffee crystals
3/4 C sugar
3/4 C brown sugar
2 eggs
2 tsp vanilla
2 C all-purpose flour
1/3 C unsweetened cocoa
1/2 tsp baking powder
1/4 tsp salt
1 C chocolate chips
Lightly grease cookie sheet and preheat oven to 350 deg F.
In a double boiler, melt butter and 1/2 cup chocolate chips. Remove from heat and stir in coffee crystals. Cool for 5 min and add in white and brown sugars, eggs, and vanilla.
In mixing bowl, combine flour, cocoa, baking powder and salt.
Add the melted chocolate and stir.
Mix in 1 cup chocolate chips.
Bake for 10 minutes. Allow to cool on cookie sheet for a minute before transferring to cooling rack.
These cookies are fudgy on the inside and the chocolate and coffee blend so well for an after dinner treat. Serve warm with a scoop of your favorite ice cream.
