    • 1 cup (2 sticks) unsalted butter, softened
    • ⅔ cup powdered sugar, sifted, plus more for rolling
    • 1 teaspoon pure vanilla extract
    • ⅛ teaspoon peppermint extract
    • ¼ teaspoon salt
    • 2 cups all-purpose flour
    • ½ cup finely crushed peppermint candies


      1. Preheat oven to 350 degrees F.
      2. Line baking sheets with parchment paper or a silicone mat.
      3. Crush peppermint by using a resealable bag and rolling pin or the flat end of meat mallet.
      4. In a large bowl or bowl or electric mixer, beat together butter and ⅔ cup powdered sugar until well combined.
      5. Add both extracts and salt.
      6. Gradually add flour, beating until well combined.
      7. Add crushed peppermint candy and blend well.
      8. Divide the dough using a cookie dough scoop or tablespoon.
      9. Bake for 8-10 minutes or until the bottoms are lightly golden brown.
      10. Let cool for 5 minutes on a wire rack before transferring cookies to cool completely.
      11. Roll in additional powdered sugar. 
      12. Store in an airtight container for up to 3 days.
