Easy Cherry Pie Thumbprint Cookies
It’s time to start baking for Christmas! Are you ready? This is a Cherry Pie Cookie recipe I got from Lucky Leaf and I’ve plated them up to deliver them with my beautifully personalized Christmas mini booklet card from Minted.

I made several batches of these easy cookies – Cherry, Blueberry, and Apple. I also made a chocolate chip cookie crust as well. Yes, they were delicious and I can’t wait to add them to may cookie platters. My husband liked the apple pie cookies, my daughter enjoyed the blueberry pie cookies, and my favorite were the cherry cookies. Although, I’d like to try them with the strawberry and the cranberry apple pie filling. I bet those would be good as well!

Easy as Pie Thumbprint Cookies
Soft and yummy Sugar cookies stuffed with sweet cherry pie fruit fulling, or apple filling or mixed berry filling and then drizzled in chocolate.
Ingredients
- 1/2 cup Butter, softened
- 1/2 cup margarine, softened
- 2 cups Flour
- 3/4 cup Powdered sugar
- 1 teaspoon Vanilla
- 1 21-ounce can Lucky Leaf Cherry Pie Filling
- 1/2 cup white or milk chocolate chips
For the Chocolate Cookies
- 1/2 cup Butter, softened
- 1/2 cup margarine, softened
- 1 3/4 cups Flour
- 1/4 C cocoa powder
- 3/4 cup Powdered sugar
- 1 teaspoon Vanilla
- 1 21-ounce can Lucky Leaf Cherry Pie Filling
- 1/2 cup white or milk chocolate chips
Instructions
- Preheat oven to 325 degrees F.
- Mix butter and margarine until fluffy. Add flour, powdered sugar and vanilla just until combined and a soft dough is formed.
- Roll the dough into two-inch balls. Place on greased baking sheet or baking sheet lined with parchment paper. Press thumb into center of cookie to make a well. Place cherries into each cookie.
- Bake 12-15 minutes. Allow cookies to cool.
- Melt chocolate according to package directions. Drizzle over cookies. Let chocolate set and serve immediately or store in an airtight container.
