I love me some gingerbread this time of year and I was so stoked when PEEPS & Co. sent me a huge box of Gingerbread Men Marshmallows! Yumm-o!!
To make these fun and even more tasty, I put them on top of a ginger cookie pop! I love baking with my kid and these were fun and easy to make with her! She had a great time making the huge cookies and then adding the marshmallow men on top.

Peeps Gingerbread Men Cookie Pops
I can’t get over these cute Peeps Gingerbread Men Cookies Pops! I love the sweet marshmallow flavor along with the spicy gingerbread cookie.

Ingredients
- 1 bag of Betty Crocker Gingerbread Cookie Mix and the ingredients on bag
- 12 Popsicle sticks
- 2 packs of PEEPS and Co. Gingerbread Men
- 1/2 cup powdered sugar
- 2 tablespoons milk
- 1/2 teaspoon vanilla
- White Sugar Sprinkles, if desired
Instructions
- Prepare your cookie batter according to the instructions on the bag. Form into large 2 Tablespoon sized balls. Insert a wooden popsicle stick into the back of the cookie dough ball and then flatten with a cup. Bake as directed and cool.
- Make your simple cookie glaze by mixing the sugar, milk, and vanilla. Only add as much milk as necessary to make a smooth, yet thick consistency.
- Drizzle over the cookie, sprinkle with Sugar Sprinkles, and then adhere the PEEPS Gingerbread man.
- Enjoy your fun Gingerbread treats!
