I so wish that there were a Trader Joe’s closer to me!
I don’t get there very often because I have to drive an hour and a half to get there. I recently found out that there is a Trader Joe’s around the corner from my M.I.L! I could not believe it!
Now, when I need something, I plan it with her a few days in advance of seeing her and I get my goodies.
Now, life is better. Not Perfect – just better.
(Perfect would be the TJ’s around the corner from ME.)
Anyway…. a few months ago, I was at Trader Joe’s and my Little Cup picked out some Cat Cookies. She wanted them for lunch and snack. So, into the basket they went.
Turns out she doesn’t like Cat Cookies.
And I LOVE them! Especially when dipped right into Nutella from the container! So good!
Turns out that these little Cat Cookies are made from the same stuff as the Cookie Butter that they sell.
So, I put on my Evil Genius Cape and made some Cookie Butter Truffles for you.
Step 1. Put cookies into a Food Processor
Step 2. Pulverize the Cookies
Step 3. Add the Cookie Butter
Step 4. Make Balls
NOTE : I don’t suggest putting them onto sticks. The cookies are very dense. If you insert a stick into the cookie ball, it will crack and break apart. Leave them as truffles.
If you end up with a naked spot in the bottom of you truffle, simply re-dip the bottom and allow it to dry.
Now, just a little disclaimer.
These are NOT Cake Truffles. They are not soft and moist on the inside.
Since they were made with hard, crunchy cookies, they do have a course texture inside. Not really crunchy, but not really creamy either.
It’s a mixture of the fine crumbs and the butter.
I really liked the flavor of these! They have the slight gingerbread flavor that is perfect for the holiday season.
I think these would be a good treat on a holiday dessert table.
If you haven’t had Cookie Butter or you don’t have a Trader Joe’s around you, I’m sure you can do the exact same thing with Biscoff Cookies and Spread.
Trader Joe’s Cookie Butter Truffles
by Pint Sized Baker
Prep Time: 1 hour
Ingredients (15 truffles)
- 3 C Trader Joe’s Cat Cookies
- 1/2 C Trader Joe’s Speculoos Cookie Butter
- Dark Chocolate Candy Coating
Instructions
Put three cups of cookies into a Food Processor and grind until only small crumbs remain.
Add in Cookie Butter and mix until all crumbs are incorporated.
Roll into 1 inch balls.
*If the balls will not hold, add a bit more of the cookie butter. I could not make perfectly round balls because they threatened to fall apart.
Place rolled balls into the fridge and melt candy melts.
Dunk the ball into the chocolate or spoon over the ball on a fork. Tap off excess and transfer to a cookie sheet covered with wax paper.
If desired, add cookie or cookie crumbs (or sprinkles) to the wet chocolate to decorate.
Enjoy!

I will so be making these. I love their cookie butter, but have never actually purchased it. I was afraid I would eat it all myself. Now, I have an excuse. I'll make the truffles and give them away 😉 Thanks for the inspiration.

No way will one open in West By-God Virginia! I can hope so something closer in Northern Virginia, but not out here in the sticks!
I shop at TJ's every week, not to make you jealous, but I have never seen cookie butter. I just mentioned it to my husband, he knew exactly what it was. Hump…how could he not share the fun. Anyway, this looks good and like something I need to try. Thanks for the idea.

I, also, happen to LOVE Trader Joe's cookie butter AND cat cookies–and these truffles look amazeballs, Karyn! Thankfully my TJ's isn't as far away as yours–yikes!!–but it's not convenient and in a weird part of town, so sadly I don't go often 🙁 now I have a good reason though!
I'd go to sketchy-ville for some Cookie Butter! And I'd bring you back a jar!
Oh lord have mercy! I so love Trader Joe's cookie butter, but would have never given those cat cookies a second look, (I hate cats, silly I know) so thank you, thank you, thank you for sharing this! I don't have a Trader Joe's near my house but there is one about 20 minutes from work, so a trip there is usually a planned event…and the next visit is being planned as I type!
Get the cookies and bit their little heads off! Just kidding, they are too small to be that precise. Pick some up and enjoy!

I have a Trader Joe's a few miles away, and I have to force myself not to load up on the cookie butter because it is very dangerous to have around…especially as an empty-nester! It's just me and the hubs and no one to help eat the cookie butter. I didn't know that the cat cookies were the cookie version?!? I have had them quite awhile ago, but will have to pick up some more. So cute how you used them to decorate the truffles:) BTW, World Market is about 45 min. away and they have the Biscoff spread:)
Who needs World Market for Biscoff when my local Wal-Mart carries it!? Love that stuff!

These look amazing. We don't have TJ's in Denver yet, but I am from L.A. and they are everywhere there. One of the great places that I miss. We are getting one here soon. My mom is coming for Thanksgiving so I will try to get her to bring me some.

These look great! I know how you feel about Trader Joe's. I got used to one in my hometown in PA but here in Denver there aren't any in sight…until next year!!! Yeah, recently read that one is going in no where near my house but that is ok. I'll find it!
