Giant Easter Cookie
This year I’ll be celebrating Easter away from home… like far, far away… nearly 5000 miles away! My daughter and I will be headed out to visit Grandma in Hawaii and I’m so looking forward to it! However, with the packing, that also means no traditional Easter basket this year for the kiddo. Not to fear though, because I plan on making a Giant Easter Cookie for everyone to share. This sugar cookie is perfect swap for a basket. I’ve added a few PEEPS and chocolate candies on it and it just looks so cute. The best part (in my humble opinion) is that there won’t be a ton of leftover candy for the rest of the month. I call that a WIN!
I grew up on Hawaii and all of my family still lives on the islands. My siblings and their families are still on Oahu while my parents have retired to the Big Island. That’s where we are headed to. It’s also our Spring Break and a week at the beach is just what this West Virginia girl needs! It really sucked that we didn’t get much of any snow all winter and then on the first day of spring we got 8 inches of the white stuff dumped on us.
Come on Mother Nature!
This Easter Cookie was inspired by those new giant cookie “cakes” that are popping up all over Instagram. You see them usually as letters or numbers for birthday cake substitutions, but I wanted to keep is simple and just got with an egg shape.
I cut out a template and baked my oversized cookies then make the frosting and added the candies. It really can’t get much easier.
I hope that you love it and give it a try.
My daughter and her friends gobbled up the cookie during a sleepover. It was too much for three little girls and I’m sure that this would be plenty for a family to share.
Use your favorite candies. Have fun with the frosting colors and design. There’s no wrong way to decorate your cookie.

Giant Easter Cookie
Swap out the Easter basket for a Giant Easter Cookie this year. It's a simple sugar cookie loaded up with frosting and fun Easter candy for the kids to enjoy.
Ingredients
For the Sugar Cookie
- 3 cups flour
- 2 tsp baking powder
- 1 C butter (2 sticks), cold
- 1 C Dixie Crystals sugar
- 1 egg
- 1 1/2 tsp Adam's Extract flavor of choice - Vanilla, Lemon and Almond are my favorites
For the Frosting
- 1/2 cup (1 stick) unslated butter
- 1 pound Dixie Crystals powdered sugar
- 2 teaspoons Adam's vanilla extract
- 2 - 4 tablespoons milk
- Food coloring - I used pink, blue and purple
- Easter Candies - your choice
Instructions
For the Cookies
- Preheat the oven to 350F and line two cookie sheets with parchment paper or silicone mats.
- Mix the flour and baking soda in a bowl and set aside.
- Cut the cold butter into 1-inch bits and mix in a stand mixer with a paddle attachment. Add in the sugar and mix until it's light and fluffy. Beat in the egg and extract.
- Gradually add in the flour 1 cup at a time until it's just combined. Scrape down the sides of the bowl. The mixture will be thick and crumbly.
- Transfer the dough to a large piece of plastic wrap. Cover it with a second piece of plastic wrap and press/roll out to ⅛" thickness. Cut out your giant Easter Egg shape and place them on to the cookie sheet. Place the cookie sheet into the freezer for 15 minutes, then bake for 12-15 minutes. Cool on the sheet for two minutes then transfer to a cooling rack.
- When all the cookies are baked and cooled, it's time to decorate.
For the Frosting
- Prepare your buttercream. Mix the butter on medium speed until smooth and blended. Gradually add in the powdered sugar and vanilla. Add the milk as needed to smooth the frosting and thin it your desired consistency.
- Divide frosting into three containers and tint with food coloring. Transfer to prepared piping bags.
Decorate the Cookies
- Place a dollop of frosting on the cake platter and attach the bottom cookie. Pipe out big dollops of frosting to cover the cookie. Top with a second cookie and repeat frosting dollops.
- Add desired Easter candies and any flowers if desired.
- Cover if not serving immediately.

Wow I love the idea of a giant Easter Cookie….my daughter would love this, especially because she is a tween and just a little to old to go hunting for Easter Eggs.
