    Ingredients

    • 3 tablespoons butter, divided
    • 1/3 cup sugar, divided
    • 1/2 teaspoon lime zest
    • 1 cup blackberries
    • 1/2 cup flour
    • 3/4 teaspoon baking powder
    • 1/4 teaspoon salt
    • 1/3 cup milk

    Instructions

    1. Preheat the oven to 350 degrees F.
    2. Melt the butter in the microwave. Place ½ tablespoon of melted butter into the bottom of each ramekin. Set aside the remaining two tablespoons of melted butter to cool.
    3. Mix 1 tablespoon sugar with the lime zest and set aside.
    4. Place the blackberries and 1 tablespoon of the sugar (not the lime sugar) into a small saucepan. Cook over low heat to soften the blackberries until you can smash them with a fork.
    5. In a small bowl, mix together the remaining sugar, flour, baking powder, and salt. Whisk in the milk and 2 tablespoons of melted butter.
    6. Divide the cooked blackberries between the ramekins followed by the batter. Top each with lime sugar.
    7. Bake the cobblers for 30 - 35 minutes. Edges will be brown and crisp.
    8. Cool for 15 minutes and serve warm.
    9. Top with whipped cream and fresh berries.

    Notes

    Cobblers can be baked in mason jars or larger mugs. Baking time might be longer if the container is taller. This recipe easily doubles.
